This is a great recipe when I am feeling lazy but need something healthy and nutritious.
The butter bean masala curry needs a few basic pantry ingredients and takes only 20 mins to make.
The sauce is so delicious. my daughter calls it the vegetarian butter chicken.
Recently I have been obsessed with anything Butter beans. These are a complete meal. Very high in protein and fibre and low in calories.
I make a double portion and we eat it for two meals at least. This is really a quick and budget friendly meal.
Tastes amazing with roti, naan or rice. I love it with a buttery piece of sourdough bread.
