Cheesy Spinach Corn Bake (Cauliflower Sauce)


This recipe is a delicious twist on a classic casserole, using healthy cauliflower for a creamy sauce and crispy cheese topping. Perfect as a side dish or vegetarian main!

Ingredients:

For the Filling:

  • 2 cups Cauliflower Sauce (recipe below)
  • 1 cup frozen corn, thawed
  • 2 cups baby spinach (frozen spinach works too)
  • 1 tbsp chopped fresh parsley (optional)
  • 1 red onion, finely chopped
  • 1 cup grated cheese (mozzarella, cheddar, or a blend)
  • Dried oregano (to taste)

For the Cauliflower Sauce:

  • 1 medium head cauliflower, roughly chopped
  • 3/4 cup chopped garlic
  • 1 tsp olive oil
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1/2 teaspoon dried herbs (Italian seasoning, thyme, etc.)
  • 2 tablespoons cream cheese (or other soft cheese)


Method:

Make the Cauliflower Sauce:

  • Boil cauliflower florets in 2 cups of water for 10-12 minutes, or until tender. Drain and let cool slightly.
  • Blend the Caulifowers to a puree.
  • In a pan, heat olive oil over medium heat. Sauté garlic until fragrant (about 30 seconds).
  • Add the cauliflower puree to the pan and whisk to combine.
  • Pour in milk and bring to a simmer. Reduce heat and simmer for 2-3 minutes, until slightly thickened.
  • Season with salt, pepper, and dried herbs. Remove from heat and stir in cream cheese until melted and smooth.

Filling:

  • Preheat the oven at 180 deg
  • Saute garlic and onion in Olive Oil
  • Add the corn and spinach and cook till the spinach wilts
  • Add the corn mixture to the cauliflower sauce and add cheese on top
  • Bake in the oven for 15 mins or till the cheese gets a nice brown colour.
  • Use this as a filling for puff pastries, toasties or just enjoy as it is
