Ingredients:

Filling:

  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and squeezed dry)
  • 2 cloves garlic, minced
  • 1/2 red onion, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon grated cheddar cheese
  • 2 teaspoons olive oil or butter

Puff Pastry:

  • 2 sheets puff pastry (thawed according to package instructions)
  • Sesame seeds, for sprinkling
  • Melted butter, for brushing



Method:

  • Preheat the oven to 350°F (175°C).
  • Prepare the Filling: In a pan over medium heat, warm olive oil or butter. Add onions and garlic, and sauté for 2 minutes, until softened.
  • Add the spinach and cook for a few minutes, stirring occasionally, until wilted and any excess moisture evaporates.
  • Remove the pan from heat and let the filling cool slightly.
  • In a bowl, combine the cooled spinach mixture with all the cheeses. Season with salt and pepper to taste.
  • Assemble the Rolls: Unfold one sheet of puff pastry on a lightly floured surface. Spread a heaping spoonful of the filling along one long edge of the pastry.
  • Roll up the pastry tightly, starting with the filled edge. Cut the roll into 1-inch slices (or desired size). Repeat with the remaining puff pastry and filling.
  • Place the rolls on a baking sheet lined with parchment paper. Brush the tops with melted butter and sprinkle with sesame seeds.
  • Bake for 10-12 minutes, or until golden brown and puffed.
  • Let cool slightly before serving.
