Easy Tofu Scramble

Made with tofu, a plant-based powerhouse of protein and iron, this vegan breakfast option is both delicious and nourishing.


Tofu is a fantastic source of both protein and iron, keeping you feeling full and energized throughout the morning.The simple seasoning creates a familiar flavour profile that reminds you of scrambled eggs.


Made in a single pan, this recipe minimizes cleanup and maximizes your time in the morning

About Me

Ingredients:

  • 1 block firm tofu, pressed and crumbled
  • 2 teaspoons ghee or cooking oil
  • 1 teaspoon cumin seeds
  • 1 cup finely chopped onions
  • 1 cup finely chopped tomatoes
  • 1/2 cup finely chopped baby spinach
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • 1/2 cup finely chopped coriander leaves (cilantro)
  • (Optional) Milk or plant-based milk, for desired consistency


Method:

  • Heat ghee or oil in a pan over medium heat.
  • Once hot, add the cumin seeds and let them sizzle for a few seconds. Then, add the chopped onions and sauté until softened and pink.
  • Stir in the turmeric and coriander powder, followed by the chopped tomatoes. Sauté for 2-3 minutes, allowing the flavours to meld.
  • Crumble the pressed tofu and add it to the pan with the vegetables and spices. Mix well to combine.
  • Add the chopped baby spinach and cook for a few minutes, or until wilted. Finally, stir in the chopped coriander leaves.
  • If you prefer a softer scramble, add a splash of milk or plant-based milk at this point.
  • Remove the pan from heat and serve your delicious Tofu Scramble hot on toast, or enjoy it wrapped in a tortilla for a breakfast burrito.
