Edamame Guacamole

This 5-minute Edamame Guacamole is your new healthy party trick! Packed with plant-based protein from edamame, healthy fats from avocado, and a veggie boost from spinach , it's creamy, flavorful, and satisfying.

Enjoy it with chips, veggies, toast, or sandwiches, or create an impressive appetizer platter – it stores well for 3 days (but trust us, it won't last that long!).

About Me

Ingredients:

  • 1 cup , shelled edamame (frozen works)
  • 1 ripe avocado
  • 1 tablespoon olive oil
  • Juice of ½ lemon
  • 1 cup baby spinach
  • 2 cloves garlic
  • 1 green chili (optional)
  • ½ teaspoon cumin seeds
  • Salt and pepper to taste
  • ¼ cup chopped fresh coriander (cilantro)

Method:

  • Combine all ingredients in a high-speed blender.
  • Blend until smooth, adding iced water a tablespoon at a time if needed to reach your desired consistency.
  • Season with salt and pepper to taste.
  • Fold in chopped coriander.
  • Store in an airtight container in the refrigerator for up to 3-4 days.
