Tempeh Patties

Did you know that if you bake leftover rice with some spices, it turns into this crunchy, crispy goodness that you can add to any salad, poke bowl, or toast?

We literally eat this salad on repeat these days. It’s packed with lots of veggies, avocado, edamame, and a delicious oil-free tahini dressing.

Add your choice of protein, and you have a very healthy meal in a bowl that’s ready in under 30 minutes and absolutely irresistible.

Ingredients

  • 150 grams tempeh, grated
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1 tablespoon grated ginger
  • 1 tablespoon ghee or oil of your choice
  • 1 teaspoon cumin seeds
  • 1 cup shredded carrot
  • Salt and pepper to taste
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • Chopped coriander, for garnish

Method

  • Heat ghee or oil in a pan over medium heat. Add onion, green chili, and ginger. Sauté until softened.
  • Add grated tempeh and mix well. Stir in carrots, cumin seeds, coriander powder, turmeric powder, salt, and pepper. 
  • Cook for a few minutes, allowing the tempeh to absorb the flavours.
  • Let the mixture cool slightly before forming into 4-6 patties.
  • Heat a skillet or griddle over medium heat with a little oil. Cook the patties for 4-5 minutes per side, or until golden brown and cooked through.
  • Serve hot with your favorite chutney, or use them in burgers, wraps, or salads.
