Speedy Honey Garlic Chicken (Baked or Grilled)

This Honey Garlic Chicken recipe is the perfect weeknight winner! Tender chicken pieces are seasoned and grilled until juicy, then tossed in a ridiculously addictive, tangy, and sweet garlic-honey butter sauce. It pairs perfectly with the Hot Buttered Corn Rice (a highly recommended combination!).

Ingredients

For the Chicken:

  • 500g chicken thigh, boneless and skinless, cut into bite-sized cubes
  • 3 tbsp olive oil
  • 1 tsp smoky paprika
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp white pepper
  • Salt to taste


For the Garlic Honey Butter Sauce:

  • 2 tbsp butter, melted
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • Zest of 1 lime
  • Juice of ½ lime
  • 1 garlic clove, minced
  • Salt and pepper to taste

Method

  1. In a large bowl, combine the chicken thigh pieces, olive oil, and all the seasonings (smoky paprika, Italian seasoning, onion powder, garlic powder,  pepper, and salt). Toss well to ensure the chicken is completely coated. Set aside to marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Preheat your oven to 200°C (400°F). Arrange the marinated chicken pieces on a baking tray lined with parchment paper. Grill (or bake) for 10 minutes.
  3. Flip the chicken pieces and grill for another 5 minutes, or until the chicken is cooked through and has crispy, caramelized edges.
  4. While the chicken finishes cooking, prepare the sauce. In a small bowl, combine the melted butter, soy sauce, honey, lime zest, lime juice, minced garlic clove, salt, and pepper. Mix until well combined.
  5. Remove the hot chicken from the oven. Pour the entire Garlic Honey Butter Sauce over the chicken and toss quickly to coat every piece. Serve immediately.
