Easy Chicken Noodle Stir Fry

Ingredients

  • 250g noodles of your choice (ramen, udon, or egg noodles work well)
  • 2 tbsp avocado oil or any neutral oil
  • 350g minced chicken
  • 1 small onion, thinly sliced
  • 3-4 cloves garlic, thinly sliced
  • 2 handfuls leafy greens (spinach, bok choy, or kale)
  • Salt and pepper to taste
  • 3 tbsp teriyaki sauce
  • 2 tsp sesame oil
  • 1 tbsp honey
  • 2 tsp chilli oil (optional)

Method

  1. Bring a pot of water to a boil and cook your noodles according to package instructions until they are al dente. Drain and set aside.
  2. While the noodles are cooking, heat the avocado oil in a wok or large pan over high heat. Add the minced chicken and cook, using your spatula to break it up until it's cooked through and slightly crispy.
  3. Add the sliced onion and garlic to the pan with the chicken. Continue to cook for a few minutes until the onion softens and begins to brown. Toss in the leafy greens and cook just until they wilt, then season with salt and pepper.
  4. Add the cooked noodles to the pan. Pour in the teriyaki sauce, sesame oil, honey, and chilli oil (if using). Toss everything together until the noodles are well combined with the sauce and other ingredients.
  5. Serve: Taste and adjust the seasoning as needed. Serve immediately.
