Ingredients

For the Chipotle Chicken

  • 250g chicken tenderloins
  • 1 tbsp olive oil
  • 2 tbsp adobo sauce (from canned chipotle in adobo)
  • 1 tbsp honey
  • Spices:
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp mixed dried herbs
  • Salt and pepper to taste
  • Chopped coriander

For the Chipotle Sauce

  • Chipotle peppers (from canned chipotle in adobo)
  • 2 tbsp mayonnaise
  • 1 tbsp honey
  • 1 tsp garlic
  • 1 tsp lemon juice
  • Salt to taste

For the Pizza Base & Toppings

  • Store-bought or homemade pizza base
  • 1 cup pizza sauce
  • 2 cups shredded cheese (mozzarella + cheddar)
  • ½ cup olives
  • 1 cup sliced vegetables (capsicum, onion, mushrooms, etc.)

Method

1. Prepare the Chipotle Chicken

  • In a bowl, combine chicken tenderloins with olive oil, honey, adobo sauce, and all the spices. Mix well to coat.
  • Let it marinate for 20–30 minutes.
  • Cook the chicken on medium-high heat until slightly charred and fully cooked (about 2–3 minutes per side).
  • Rest for 5 minutes, then shred. Toss the shredded chicken in its juices and mix in chopped coriander.

2. Make the Chipotle Sauce

  • Blend chipotle peppers, mayo, honey, garlic, lemon juice, and salt until smooth and creamy.
  • Taste and adjust seasoning as needed.

3. Assemble the Pizza

  • Preheat oven to 200°C 
  • Brush a  sheet pan with oil. Roll out the dough to fit the pan, or use a store-bought base.
  • Spread a generous layer of chipotle sauce and pizza sauce.
  • Add shredded cheese, then top with chicken, veggies, olives, and a drizzle of chipotle sauce.
  • Bake for 12–13 minutes until golden and bubbly.

Serve & Store

  • Garnish with fresh coriander and drizzle any remaining chipotle sauce.
  • Slice and serve hot!
  • Store leftovers in an airtight container for up to 3 days. Reheat in the oven or air fryer for best results.
