Ingredients

  • 1 tablespoon oil
  • 2 packets Udon noodles
  • 2 cups sliced mushrooms
  • 1/2 cup sliced onions
  • 2 cups chopped bok choy and spinach
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon sesame seeds, for garnish
  • Handful of chopped green onions, for garnish


Sauce:

  • 2 tablespoons sweet chilli sauce
  • 1 heaped tablespoon Gochujang paste
  • 1 teaspoon sesame oil
  • 2 teaspoons rice wine vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon red chilli flakes (optional)

Method

  • Cook the Udon noodles according to package directions. Drain and set aside.
  • Mix all the sauce ingredients and keep aside.
  • Heat the oil in a wok or large skillet over medium heat. Add onions, ginger, and garlic. Sauté until fragrant.
  • Add the sliced mushrooms and cook until softened.
  • Add the chopped bok choy and spinach. Stir-fry until wilted.
  • Add the cooked noodles and the prepared sauce .
  • Stir well to combine.
  • Garnish with sesame seeds and chopped green onions. Serve immediately.
