Sweet Potato Chickpea and Quinoa Burgers

Ingredients

For the Burger Patties:

  • 1 cup roasted sweet potato, mashed
  • 1 cup boiled chickpeas
  • 1 cup cooked quinoa
  • 1 tbsp nutritional yeast (optional)
  • 1 tsp smoky paprika
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 tsp coriander powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup chopped fresh coriander leaves
  • Salt and pepper to taste

For the Spiced Yogurt Sauce:

  • 2 tsp coriander chutney
  • 1/2 tsp sugar
  • 1 cup plain nonfat Greek yogurt
  • 1/4 tsp salt
  • Juice of 1/2 a lemon

To Assemble:

  • Ghee, olive oil, avocado oil, or cooking spray for frying
  • Brioche buns
  • Lettuce, tomato, pickled onions

Method

  1. In a small bowl or blender, combine the coriander chutney, sugar, Greek yogurt, salt, and lemon juice. Blend until smooth. Set aside in the refrigerator to chill.
  2. Make the Burger Patties: In a blender or food processor, combine all the burger patty ingredients: roasted sweet potato, chickpeas, cooked quinoa, nutritional yeast (if using), smoky paprika, cumin, chili powder, coriander powder, garlic powder, onion powder, chopped coriander, salt, and pepper. Pulse until the mixture is well combined but still has some texture. Do not over-blend into a paste.
  3. Transfer the mixture to a bowl and form it into small, compact patties.
  4. Heat your choice of oil in a pan over medium-high heat. Carefully place the patties in the pan and cook for 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Lightly toast the brioche buns. Spread a generous amount of the spiced yogurt sauce on both sides of the bun. Add a layer of lettuce, followed by the cooked burger patty. Top with slices of tomato and pickled onions.
