Quick & Healthy Veggie Shawarma Bowls with Yogurt Feta Sauce

Ingredients

For the Veggies:

  • 1 medium cauliflower, cut into florets
  • 1 medium Broccoli ,Cut into florets
  • 2 cups mixed bell peppers, sliced
  • 1 large onion, sliced
  • 1 tablespoon smoky paprika
  • 1 tablespoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • Salt and pepper to taste
  • Olive oil

For the Yogurt Feta Sauce:

  • 1 cup Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method

  1. Preheat oven to 400°F (200°C).
  2. Toss the cauliflower, broccoli,bell peppers, and onion in a large bowl with the spices and a drizzle of olive oil. Spread evenly on a baking sheet.
  3. Roast in the preheated oven for 15-20 mins minutes, or until the vegetables are tender and slightly caramelized.
  4. While the veggies roast, combine Greek yogurt, feta cheese, garlic, lemon juice, salt, and pepper in a small bowl. Stir until well combined.
  5. Serve the roasted veggies with a dollop of yogurt feta sauce. Enjoy!
