No-Bake Dark Chocolate Puffed Quinoa Bars

These no-bake puffed chocolate treats are my personal favourite—packed with quinoa, flax seeds, and rich dark chocolate!

Tip: Puffing Your Own Quinoa

You can puff your own quinoa. Simply dry roast uncooked quinoa in a dry pan over low heat, stirring continuously. The quinoa will start to puff up and become crunchy. Be careful not to burn it. This process takes just a few minutes. Let the puffed quinoa cool completely before adding it to the recipe.

Ingredients

  • 300g dark chocolate
  • 1 tablespoon coconut oil
  • 1.5 cups plain rice Krispie's (not sugary)
  • 1 cup puffed quinoa
  • 3 tablespoons milled flaxseed

Method

  1. Line an 8-inch square baking tin with parchment paper. This will make it easy to lift the bars out later.
  2. In a microwave-safe bowl, combine the dark chocolate and coconut oil. Melt in 30-second intervals, stirring well after each interval, until smooth and completely melted.
  3. In a separate large bowl, pour in the rice krispies, puffed quinoa, and milled flaxseed.
  4. Pour the melted chocolate mixture over the dry ingredients. Stir gently but thoroughly until all the rice krispies and puffed quinoa are evenly coated in the chocolate.
  5. Pour the chocolate-coated mixture into the prepared baking tin.
  6. Use the back of a spoon or a spatula to evenly spread the mixture in the tin and gently press it down to create a compact layer.
  7. Transfer the tin to the refrigerator and let it set for at least 2 hours, or until the chocolate is firm.
  8. Once set, remove the bars from the tin by lifting the parchment paper. Cut into your desired size bars.
