Ingredients

  • 1 block extra-firm tofu, pressed and shredded
  • 2 cloves garlic, minced
  • 1 red onion, finely chopped
  • 1 cup salsa (store-bought is fine)
  • 1 cup peppers, chopped
  • 1 cup fresh coriander, chopped
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp smoky paprika
  • 1 tsp cayenne pepper
  • 1 tbsp Mexican taco seasoning
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Oil or ghee to cook in
  • Chopped jalapeños (optional)

Method

  1. Heat oil or ghee in a large pan over medium heat. Add the finely chopped red onion and minced garlic and sauté for 2 minutes, or until the onion is lightly translucent.
  2. Add the shredded tofu to the pan and sauté for a few minutes. Stir in the chopped peppers and all the spices: turmeric, cumin, coriander powder, smoky paprika, and cayenne pepper.
  3. Continue to cook, stirring occasionally, until the tofu is slightly crispy and golden brown. Make sure it doesn't burn.
  4. Reduce the heat and stir in the salsa and chopped fresh coriander. Add the juice of one lemon and the chopped jalapeños (if using).
  5. Taste and adjust seasoning with salt and pepper as needed. Use this flavourful mince as a filling for tacos, wraps, sandwiches, or a topping for nachos and rice bowls.
