Ingredients

For the Shredded Tofu:

  • 500g firm tofu, pressed and shredded (you can use a box grater for this!)
  • 1 tbsp avocado oil (or any cooking oil)
  • 2 tbsp soy sauce
  • 1 small onion, finely sliced
  • 1/2 cup fresh coriander, chopped
  • 1 tbsp sesame seeds
  • For the Quick-Pickled Cucumbers:
  • 1 cucumber, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tbsp sweet chilli sauce

For the Spicy Edamame Sauce:

  • 1 cup boiled edamame (shelled)
  • 1/2 cup boiled green peas
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha (adjust to your spice preference)
  • 1 tbsp nutritional yeast
  • Pinch of salt
  • Pinch of pepper

For Assembly:

  • 2 Turkish loaves (or similar crusty bread), sliced horizontally and lightly toasted
  • Butter (for toasting bread, optional)

Method

  1. Prepare the Pickled Cucumbers: In a small bowl, combine the thinly sliced cucumber, rice vinegar, and sweet chilli sauce. Give it a good stir and set aside to let the flavors meld while you prepare the other components.
  2. Make the Spicy Edamame Sauce: Combine the boiled edamame, boiled green peas, mayonnaise, sriracha, nutritional yeast, salt, and pepper in a blender or food processor. Blend until completely smooth. Do not add any water, as you want a thick, spreadable sauce.
  3. Cook the Shredded Tofu: Heat the avocado oil in a large pan or wok over medium-high heat. Add the shredded tofu and spread it out. Let it cook for a few minutes, stirring occasionally, until it starts to turn crispy and golden. Pour in the soy sauce and mix well, ensuring the tofu is evenly coated. Remove the pan from the heat and stir in the chopped coriander and sliced onions.
  4. Assemble the Subs: Lightly butter the cut sides of your Turkish loaves (if using butter) and toast them slightly in a pan or toaster for a warm, crisp base.
  5. Build Your Sub: Spread a generous layer of the spicy edamame sauce on both halves of the toasted bread. Pile a good amount of the savory shredded tofu mixture onto the bottom half, then top with a generous portion of the quick-pickled cucumbers. Place the top half of the bread on and get ready to enjoy!
