High Protein Chickpea Salad

This chickpea Salad is so easy to make and full of flavour.
Its high in protein and perfect when you want a high protein quick meal.

Ingredients

  • 2 slices of sourdough bread
  • 2 cups boiled chickpeas
  • 1 onion, finely chopped
  • Hemp seeds
  • Microgreens or rocket leaves, for garnish

Method

  • Mash the boiled chickpeas in a bowl. Add the finely chopped onion and mix well.
  • In a blender, combine Greek yogurt (or mayonnaise), garlic, coriander, turmeric, cumin, chaat masala, salt, pepper, and lemon juice. Blend until smooth.
  • Pour the sauce over the mashed chickpeas and mix thoroughly.
  • Toast the bread slices. Spread the chickpea mixture evenly on both slices of bread.
  • Sprinkle with hemp seeds and top with microgreens or rocket leaves.
