Easiest Palak Paneer

This green sauce pasta is Packed with protein and fiber, it's a delicious and ready in under 30 mins. You can never tell that this sauce has tofu in it!!!

Ingredients

  • 250g bag of spinach
  • 1 (400g) can diced tomatoes
  • 3 cloves garlic
  • 250g paneer, cubed
  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cinnamon powder
  • 2 teaspoons Kashmiri chili powder
  • 1 tablespoon garam masala
  • Salt to taste
  • Lemon juice 

Method

  • Combine the spinach, garlic, and canned tomatoes in a blender or food processor. Blend until smooth.
  • Heat the oil in a large pan over medium heat. Add the cubed paneer ,add turmeric and cumin seeds and fry until lightly golden. Remove the paneer from the pan and set aside.
  • To the same pan, add the spinach puree along wit h cinnamon, salt 
  • Mix well. Bring the mixture to a simmer over medium heat, cover, and cook for 10-15 minutes.
  • Return the paneer to the pan. Add salt and garam masala. Stir well. Add a squeeze of lemon juice, if desired and a tsp of fresh cream.
  • Serve hot with rice, naan, or roti.
