Ingredients

Date Sauce

  • 200g pitted dates
  • 2 tablespoons coconut oil 
  • 1 tablespoon nut butter 
  • 4 tablespoons maple syrup or honey
  • 1 tablespoon boiling water

For the base :

  • 1/2 cup oats (I used wheat free oats )
  • 1 tbsp cocoa powder 
  • 1 tbsp My homemade high energy protein powder
  • 3 tbsps coconut oil
  • 2 tablespoons boiling water


  • Top:
  • 80g dark chocolate
  • 1 tbsp coconut oil
  • sea salt

Method

  • Line a 1 pound loaf tin with parchment paper, or a similar sized lunchbox will work too.


  • Make the date sauce: Add all the ingredients to a powerful blender. Blend until smooth. Take out 3/4 of the sauce and put it in a bowl set it aside until later.


  • Make the BASE: to the blender with The remaining 1/4 of the caramel add the oats, cocoa powder ,protein powder, coconut oil and boiling water. Blend until combined.


  • Spoon the base mix into the loaf tin, smooth with a spoon or spatula. Top with the reserved caramel and smooth. Put this in the fridge for 20mins to set.


  • Melt the chocolate and coconut oil together. Pour over the top and tilt the tin to cover, sprinkle with sea salt. Chill for 30 minutes. Slice into bars and enjoy.


  • STORAGE: Keep in the fridge for 5 days. Or freeze for 3 months.
