Chocolate Zucchini Banana Bread

Ingredients

  • ½ cup (40g) unsweetened cocoa powder
  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup (125ml) vegetable oil
  • ½ cup (100g) coconut sugar/raw sugar
  • ½ cup (110g) light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups shredded zucchini (approximately 300g or 2 medium zucchinis, patted dry)
  • ¾ cup mashed ripe bananas (approximately 175g or 2 medium bananas)
  • 1 cup (175g) chocolate chips

Method

  • Preheat your oven to 350°F (175°C) and grease a 5x9 loaf pan with non-stick spray.
  • In a medium bowl, whisk together the cocoa powder, flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  • In a large bowl, combine the oil, vanilla extract, and both sugars. Beat until well combined.
  • Stir in the eggs, mashed bananas, and shredded zucchini until everything is well incorporated.
  • Gently fold in the dry ingredients from step 2 until just combined. Don't overmix!
  • Lastly, fold in the chocolate chips.
  • Pour the batter into your prepared loaf pan.
  • Bake for 45-60 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs sticking to it.
  • Let the bread cool completely in the pan before slicing and serving.
