Ingredients

  • 1 1/4 cups granulated sugar (coconut sugar or raw sugar can also be used)
  • 3 large eggs
  • 1 1/4 cups almond flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3/4 cup unsalted butter, softened
  • 1 cup chopped dark chocolate

Method

  • Preheat your oven to 180°C (350°F) and line an 8-inch square baking pan with parchment paper.
  • In a large bowl, beat together the sugar and eggs until light and frothy.
  • Add the almond flour, cocoa powder, and vanilla extract to the wet ingredients. Stir until just combined (a few small lumps are okay).
  • Fold in the softened butter until well incorporated.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Sprinkle the top of the batter with chopped dark chocolate.
  • Bake for 25 minutes for a fudgier brownie, or 30 minutes for a chewier texture.
  • Let the brownies cool completely in the pan before cutting into squares and serving.
