Sesame Noodle Salad

This Sesame Broccoli Noodle Salad is ready in under 30 minutes and is packed with so much flavour! 

The tahini dressing is the Star of the dish and SO good, you'll want to put it on everything! 

Think creamy, nutty, and slightly sweet - the perfect complement to the crunchy noodles and fresh broccoli. This salad is a crowd-pleaser, and the kids love it too..

Ingredients

For the Salad:

  • 200 grams rice noodles (boil as per packet instructions)
  • 2 cups broccoli florets
  • 2 cups sliced capsicums
  • 1 cup chopped spring onions and greens
  • 2 tbsp roasted sesame

For the Dressing:

  • 1/2 cup tahini
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • Salt and pepper to taste
  • 1 inch grated ginger

Method

  • Prepare the noodles according to packet instructions.
  • Once the noodles are cooked, refresh them in a bowl with cold water. Drain the water completely.
  • Preheat the oven to 200°C.
  • Roast the broccoli on a baking tray with some olive oil, salt, and pepper for 15 mins.
  • In a large salad bowl, add the cooked noodles, roasted broccoli, sliced capsicums, and chopped spring onions.
  • Mix well.
  • In a separate bowl, mix together all the dressing ingredients. You can use a nutribullet to blend the dressing.
  • Add the prepared dressing to the salad and toss well.
  • Sprinkle the roasted sesame over the salad and serve.
  • This salad is perfect for meal prep and tastes amazing the next day too.
