Ingredients

  • 2 ripe peaches, diced
  • 1 ripe avocado, diced
  • 2 tablespoons chopped fresh cilantro (coriander)
  • Juice of 1 lime
  • 1 teaspoon maple syrup (or agave nectar)
  • 1/4 cup chopped red onion
  • 1/2 jalapeno pepper, seeded and minced (adjust for desired spice level)
  • Salt, to taste

Method

  • In a medium bowl, combine all ingredients: diced peaches, avocado, cilantro, lime juice, maple syrup, red onion, jalapeno, and salt.
  • Gently fold the ingredients together until well combined. Be careful not to overmix, as the avocado can brown.
  • Serve immediately with corn chips, tacos, grilled chicken, fish, or your favourite dipping vessel.
