Ingredient Pumpkin Soup

Ingredients

  • 2 cups Pumpkin Shredded
  • 1 tbsp oil
  • 2 tbsp butter
  • 2 cups full cream milk
  • Salt, Pepper
  • Chilli flakes

Method

  • Grate the pumpkin with a coarse box grater or a use the grater attachment of a food processor.
  • Heat the butter and Oil in a large heavy based saucepan.
  • Add the pumpkin and sprinkle with salt
  • Cook the pumpkin covered gently over low heat for about 10 mins, stirring occasionally until its soft.
  • Stir in the milk and bring to a boil.
  • Blend the pumpkin mixture and blend till smooth.
  • Season to taste with salt and pepper.
  • Enjoy with crusty cheesy toasties
