High Protein Tomato Soup

Ingredients

  • 250g cottage cheese
  • 200g roasted peppers (jarred works perfectly!)
  • 400g can of diced tomatoes (I love Mutti)
  • 4 cloves garlic
  • Chili flakes (optional)
  • Salt & pepper to taste
  • Fresh parsley for garnish

Method

  • Combine all ingredients in a blender (my NutriBullet is my go-to!) and blend until smooth.
  • Heat the soup gently in a pot on the stovetop for a few minutes.
  • Ladle into bowls and garnish with fresh parsley.
  • Enjoy with grilled cheese or crusty sourdough!
