Cheesy Broccoli Quinoa Burgers

Ingredients

  • 1 cup chopped kale
  • 1 cup shredded broccoli
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon flaxseeds, ground
  • 1/2 cup cooked quinoa
  • 2 cooked potatoes, mashed
  • 2 tablespoons breadcrumbs or roasted gram flour (chickpea flour)
  • Salt and freshly ground black pepper, to taste
  • Lemon juice, to taste (optional)

Method

  •  In a large bowl, combine all ingredients. The mashed potatoes will help bind the mixture together.
  • Season with salt, pepper, and lemon juice (if using) to taste.
  • Form the mixture into small patties. Aim for a size that fits well in your buns or wraps.
  • Heat a pan or grill over medium heat with a drizzle of oil.
  • Cook the patties for 3-4 minutes per side, or until golden brown and crispy.
  • Serve immediately on hamburger buns, in wraps, or enjoy them on their own!
