Spinach (and tofu) Sauce Pasta

This green sauce pasta is Packed with protein and fiber, it's a delicious and ready in under 30 mins. You can never tell that this sauce has tofu in it!!!

Ingredients

  • 300g fresh spinach
  • 300g silken tofu
  • 1 can (400g) diced tomatoes
  • 300g pasta of your choice
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 2 tablespoons sundried tomatoes, chopped
  • 1 cup sliced mushrooms
  • Grated Parmesan cheese
  • Red pepper flakes (optional)

Method

Blend spinach, tofu, and diced tomatoes until smooth. Set aside.

Cook pasta according to package directions. Reserve about 1 cup of pasta water.

Heat olive oil in a large skillet over medium heat. Sauté garlic, sundried tomatoes, and mushrooms until softened.

Pour the spinach-tofu sauce into the skillet with the sautéed vegetables. Simmer for 10-12 minutes, or until heated through.Cook pasta according to package directions in the mean time. Reserve about 1 cup of pasta water.

Add cooked pasta and reserved pasta water to the sauce. Toss to coat. Stir in grated Parmesan cheese and red pepper flakes to taste.
