Ingredients

For the marinade:

  • 250 grams chicken breasts, sliced thin
  • 1 tablespoon soy sauce
  • 1 teaspoon cumin powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (e.g., oregano, thyme)

For the sandwich:

  • 250 grams marinated chicken
  • 1/2 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1 tablespoon chili sauce (optional)
  • Shredded cabbage and carrots
  • Bread of your choice

Method

  1. Place the sliced chicken breasts in a bowl.
  2. Combine soy sauce, cumin powder, onion powder, garlic powder, and dried herbs in a small bowl. Pour the marinade over the chicken breasts.
  3. Toss the chicken to ensure it is evenly coated in the marinade.
  4. You can refrigerate the marinated chicken for up to 3 days before cooking. For longer storage, freeze the chicken in an airtight container.
  5. Grill or pan-fry the marinated chicken until cooked through and slightly charred. Let cool and shred the chicken.
  6. In a small bowl, combine Greek yogurt, mayonnaise, and chili sauce (if using).
  7. Assemble the sandwiches: Butter and lightly toast the bread slices. Spread a generous amount of the yogurt-mayo spread on each slice of bread.
  8. Top with shredded chicken, shredded cabbage, and carrots.
  9. Grill the assembled sandwiches in a panini press or over medium heat in a skillet until heated through and slightly golden brown.
  10. Enjoy warm and serve with your favourite sides.
