Easy Traybake Chicken Fajitas

Tray Bake Chicken Fajitas ,a super quick and easy, flavourful dinner for busy nights.Make this on a busy weeknight or for a lazy weekend night in. 

Meals that Can be made ahead of time, are a lifesaver specially on the weekend. 

This chicken fajita tray bake is our family’s favourite.Its made with very simple ingredients and all in a baking tray so minimal cleaning up after.

Leftovers are great for next day meals and Marinated Chicken can be frozen for upto 2 months .

I usually make enough to feed my family at least twice.

Ingredients

  • 500 g chicken thigh fillets, sliced
  • 1 cup mixed capsicums ,sliced
  • 1 red Onion ,finely sliced
  • 1 tsp garlic, freshly minced
  • 2 tsp smoky paprika
  • 1 tsp ground cumin
  • 1 tsp dried mixed herbs
  • 1 tsp onion powder
  • Salt
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Totillas
  • 1/2 cup sour cream,Cheese (optional)
  • Lime wedges
  • Jalapeños
  • Lettuce 
  • 1/4 bunch fresh coriander/cilantro, roughly chopped

Method

  • Preheat the oven to 200 deg C
  • Mix the Chicken and Veggies with the spices, oil and Honey and Add to a large baking tray
  • Bake for 15-18 mins 
  • The chicken should be cooked through and brown.
  • Serve the Chicken with Tortillas,Lettuce,Sour cream,Jalapenos and serve hot
