Ingredients

2 tablespoons vegetable oil

  • 2 cups cooked jasmine rice (preferably cold and cooked the day before)
  • 1 medium onion, finely chopped
  • 2-3 cloves garlic, minced
  • 2 cups mixed frozen vegetables (or your favorite chopped vegetables)
  • 2 large eggs, beaten
  • Salt and freshly ground black pepper, to taste

Sauce:

  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil

Method

  1. Heat the oil in a large wok or skillet over high heat until hot and shimmering.
  2. Add the onion and garlic and cook for about 1 minute, until softened and fragrant.
  3. Throw in the frozen vegetables and stir-fry for 2-3 minutes, until slightly softened.
  4. Add the cooked rice and all the sauce ingredients (Shaoxing wine, soy sauce, sugar, oyster sauce, and sesame oil) to the wok. Stir-fry for 2 minutes, breaking up any clumps of rice
  5. Push the rice mixture to one side of the wok. Add a little more oil (around 1/2 teaspoon) to the cleared space. Pour in the beaten eggs and scramble them until cooked through.
  6. Once the eggs are cooked, stir them together with the rice and vegetables. Season with salt and pepper to taste.
  7. Remove from heat and serve your delicious 20-minute egg fried rice immediately. Enjoy it hot with your favourite protein or on its own!
