Easy and Healthy Chicken Sandwiches

Ingredients

  • 500 grams cooked chicken breast, shredded
  • 1 celery stalk, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon whole egg mayonnaise (kewpie mayo recommended)
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon Dijon mustard
  • 2 teaspoons dried oregano
  • 2 teaspoons sugar
  • Salt and freshly ground black pepper, to taste
  • 2 teaspoons sriracha (optional) or Maggi Hot & Sweet sauce
  • White sandwich bread (crusts removed, optional)

Method

  • In a medium bowl, combine the Greek yogurt, cream cheese, mayonnaise, and sriracha (if using) until smooth and creamy.
  • Stir in the minced garlic, chopped celery, and grated carrot.
  • Add the oregano, sugar, salt, and pepper to taste. Finally, fold in the shredded chicken breast until well combined.
  • Spread the chicken salad mixture evenly on slices of bread. If desired, remove the crusts from the bread before spreading.
  • Cut the sandwiches into halves, triangles, or your desired shape. Store them in an airtight container in the refrigerator for up to 2 days.
