Chicken Zucchini and Cottage Cheese Kebabs

This is a perfect recipe for a busy midweek and can be used for burgers,sandwiches ,wraps or maybe just like that.The cottage cheese adds the extra protein and makes these kebabs soft and juicy, plus the added veggies in it are a bonus.

Ingredients

  • 500 grams chicken mince
  • 1 zucchini, grated and squeezed
  • 2 tablespoons cottage cheese
  • 1 tablespoon ginger-garlic paste
  • 1 cup chopped spinach
  • 1/4 cup chopped coriander
  • 1/4 cup grated cheddar cheese
  • 1 teaspoon cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon chili powder (optional)
  • Salt and pepper to taste

Method

  • In a large bowl, combine chicken mince, grated zucchini, cottage cheese, ginger-garlic paste, spinach, coriander, cheddar cheese, cumin powder, coriander powder, chili powder (if using), salt, and pepper.
  • Knead the mixture for a few minutes until well combined.
  • Oil your hands and form small round kebabs from the mixture.
  • Heat ghee, butter, or oil in a pan over medium heat. Cook the kebabs until cooked through on both sides.
  • Enjoy the kebabs as they are, or use them in burgers, sandwiches, or wraps.
