Made with black beans, quinoa, sweet potato and tofu, they’re packed with plant protein, fibre and iron, with Mexican spices adding a delicious kick. Everything comes together in one bowl in under 30 minutes, making them perfect for meal prep. Cook a batch, keep them in the fridge and enjoy them in burgers, wraps, bowls or simply on their own.

Ingredients

1 cup black beans, drained and rinsed

1 cup cooked quinoa

1 sweet potato, boiled

½ cup chopped coriander

1 cup shredded firm tofu

Juice of ½ lemon

1 tbsp nutritional yeast

1 tsp cumin powder

2 tsp Mexican seasoning

Method

Blend everything together, form into patties, cook and keep in the fridge.

Use them however you like: in burgers, wraps, bowls or simply on their own.
