Ingredients

For the burgers:

  • 2 x 400g cans black beans, drained and rinsed
  • 1 red onion, grated
  • 1 fresh chili, deseeded and finely chopped
  • 1/2 bunch fresh coriander, leaves picked
  • 1 lime, plus extra wedges for serving
  • 2 handfuls rolled oats
  • 2 tablespoons salted peanuts
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Olive oil
  • 1 teaspoon sweet smoked paprika
  • 1 tablespoon taco seasoning
  • 6 bread rolls or 12 slices ciabatta

For the avocado sauce:

  • 1 ripe avocado
  • 1 cup Greek yogurt
  • Lemon juice
  • Salt and pepper

Method

Prepare the burger patties:

  • Combine oats and peanuts in a food processor and pulse until coarsely chopped.
  • Add drained black beans, grated onion, chili, ground coriander, cumin, taco seasoning, coriander leaves, lime juice, and a drizzle of olive oil to the food processor. Pulse until combined, leaving some bean chunks for texture.
  • Transfer the mixture to a bowl. Divide into 6 equal portions and shape into patties. Place on a tray and chill for at least 30 minutes.

Make the avocado sauce:

  • Mash the avocado in a bowl.
  • Stir in Greek yogurt, lemon juice, salt, and pepper to taste.

Cook the burgers:

  • Heat a grill or frying pan over medium heat.
  • Cook the burgers for 4-5 minutes per side, or until cooked through and golden brown.


Assemble the burgers:

  • Toast bread rolls or ciabatta slices if desired.
  • Spread avocado sauce on the bottom bun or bread slice.
  • Top with a cooked burger patty.
  • Add your favorite toppings, such as fresh tomato salsa, sliced avocado, and rocket.
  • Serve with lime wedges.
