Ingredients

  • 1 cup Frozen Shelled Edamame, thawed
  • 1 ripe Avocado, peeled and pitted
  • 1 Tbsp Seed Cycling Mix
  • 1 Tbsp Nutritional Yeast
  • 1/2 cup Fresh Coriander, chopped
  • 1/4 Onion, finely chopped
  • 1 Tomato, finely chopped
  • 1/2 Jalapeño or Green Chilli, finely chopped (remove seeds for less heat)
  • Juice of 1 Lemon (or Lime)
  • Water (to reach your desired consistency)
  • Salt and Freshly Ground Black Pepper, to taste

Method

  1. Blend the Base: Place the thawed and blanched edamame, avocado, and lemon juice,Nutritional yeast,Seed cycling mix into a food processor. Add a dash of water to start. Pulse until the mixture is combined and reaches your preferred level of smoothness. If it’s too thick, add a little more water.
  2. Season: Transfer the creamy edamame-avocado base into a medium serving bowl. Season generously with salt and black pepper.
  3. Fold in the Texture: Add the finely chopped onions, tomatoes, chillies, and coriander to the bowl. Stir gently by hand to combine everything while keeping the texture of the fresh veggies intact.
  4. Serve: Taste and adjust the salt or lemon juice if needed. Serve immediately with crunchy tortilla chips, raw vegetable sticks, or spread it thick over toasted sourdough.
