Ingredients

  • 1 cup pumpkin seeds
  • 1/4 cup hemp seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup white sesame seeds
  • 2 tbsp almonds
  • 2 tbsp almond butter
  • 1 cup dried pitted dates, soaked and excess liquid squeezed out
  • 3 tbsp chopped dried apricots
  • 1/4 cup + 1 tbsp cacao powder, plus extra for dusting
  • Zest of 1 large orange
  • β€’ Juice if 1 large orange
  • small pinch of salt
  • pistachio crumb to garnishΒ 

Method

Soak dates in hot water 5-10 min. Drain well and squeeze out water. If using soft Medjool, skip this step.

Add the dates to a food processor with remaining ingredients, reserving a little orange zest for garnishing. Process until well combined and sticky.

Wet hands and shape into 8 decent-sized balls.

Place on a tray or plate and dust over some cacao, and press in a little pistachio crumb to garnish.

Chill in the fridge for at least 30-60 min to firm up before serving. Enjoy!
