Ingredients

  • 2 cups mixed vegetables, finely shredded: capsicum, broccoli, beans, carrot and cabbage (I use my food processor for this)
  • 1 splash olive oil, for the stir-fry
  • Salt, pepper and dried herbs, to taste
  • 2 cups shredded roasted chicken (a deli chicken works well)
  • 1 cup grated mozzarella
  • 1 cup crumbled feta
  • ½ cup chopped sun-dried tomatoes
  • ¼ cup sliced olives
  • ¼ cup pesto, homemade or store-bought
  • Sliced Turkish bread, or bread of your choice

Method

  1. Stir-fry the shredded vegetables quickly in a little oil until cooked. Season with salt, pepper and dried herbs, then let them cool.
  2. In a large bowl, combine the cooled vegetables with the chicken, mozzarella, feta, sun-dried tomatoes, olives and pesto. Mix very well.
  3. Pile the filling onto the bread and grill until the cheese is melting and the top is crisp.

Notes

  • The filling keeps in the fridge for up to 3 days, so I always have a batch ready. It makes the best school lunch, after-school snack and holiday recipe for when the kids are home and forever hungry.
