Ingredients

  • 500 grams ground chicken or lamb
  • 60 grams breadcrumbs
  • 1 large egg
  • 1 carrot, grated
  • 1 zucchini, grated
  • 2 garlic cloves, minced
  • 1 teaspoons smoky paprika
  • 1 teaspoons cumin powder
  • 1 teaspoons coriander powder
  • 1 teaspoons oregano
  • 1 teaspoons cayenne pepper (optional)
  • 1 teaspoons salt and black pepper to taste
  • 1 tablespoons olive oil
  • 300 grams spaghetti
  • Green Goodness pesto
  • 0.5 cups pasta water, reserved
  • 4 tablespoons parmesan cheese, grated, to serve

Method

  1. Make the meatball mixture: In a large bowl combine 500 grams ground chicken or lamb, 60 grams breadcrumbs, 1 large egg, 1 carrot, grated, 1 zucchini, grated, 2 garlic cloves, minced, 1 teaspoons smoky paprika, 1 teaspoons cumin powder, 1 teaspoons coriander powder, 1 teaspoons oregano, 1 teaspoons cayenne pepper (optional) and 1 teaspoons salt and black pepper to taste. Gently mix until just combined — don't overwork the meat or the meatballs will be tough! 
  2. Shape the meatballs: Roll the mixture into golf-ball sized meatballs. You should get 16-18 meatballs. Set aside on a plate.
  3. Pan fry the meatballs: Heat 1 tablespoons olive oil in a large non-stick skillet over medium heat. Once hot add the meatballs and cook undisturbed for 6 minutes until golden brown underneath. Turn and cook for a further 3 minutes until golden all over and cooked through. Remove from the pan and set aside — keep the pan for later! 💛
  4. Cook the pasta: Cook 300 grams spaghetti in salted boiling water according to packet instructions. Important — reserve at least half a cup of pasta water before draining! This is liquid gold for your sauce.
  5. Make the sauce: Add 4 tablespoons Green Goodness pesto and 0.5 cups pasta water, reserved back into the same pan you cooked the meatballs in. Stir to combine and warm through over low heat. The pasta water helps create a silky, creamy sauce. 💛
  6. Bring it all together: Add the cooked pasta and meatballs into the pan. Toss everything together until well coated in that beautiful green goodness pesto sauce.
  7. Serve: Divide between bowls. Top generously with parmesan cheese, grated, to serve and serve immediately. Enjoy! 💛
