Ingredients

β€’ 500 grams lamb mince

β€’ 1Β  medium onion, finely chopped

β€’ 2 tablespoons ginger and garlic paste

β€’ 1 tablespoons green chillies, finely chopped

β€’ 1 tablespoons fresh coriander, chopped

β€’ 2 tsp coriander powder

  • 2 tsp cumin powder
  • 1 tsp turmeric powder

β€’ 1 teaspoons garam masala

β€’ 0.5 teaspoons Kashmiri chilli powder

β€’ 1 tablespoons ghee

β€’ 1Β  salt to taste

β€’ 2 tablespoons oil for frying

β€’ 4Β  paranthas to serve

β€’ 4 tablespoons chutney to serve

β€’ 1Β  onion salad to serve

Method

STEPS

1. Mix the kebab mixture: Add 1Β  medium onion, finely chopped, 2 tablespoons ginger and garlic paste, 1 tablespoons green chillies, finely chopped, 1 tablespoons fresh coriander, chopped, 2 tablespoons coriander powder, 1 tablespoons cumin powder, 2 teaspoons biryani masala or garam masala, 0.5 teaspoons Kashmiri chilli powder, 1 tablespoons ghee and 1Β  salt to taste into the 17.9 ounces lamb mince and mix well until everything is fully combined.

2. Marinate: Cover and refrigerate for at least 10-30 minutes. While the mixture rests, use this time to prepare your onion salad, chutney and paranthas.

3. Shape the kebabs: Remove from the fridge and shape the mixture into long kebabs or small patties β€” whichever you prefer for rolling.

4. Cook your way: Choose your cooking method:

πŸ”₯ Pan fry β€” heat 2 tablespoons oil for frying in a pan over medium heat and cook until golden and cooked through.

πŸ’¨ Air fry β€” at 180Β°C for 10-12 minutes, turning halfway.

πŸ«™ Oven β€” at 180Β°C for 15-20 minutes until cooked through.

5. Roll and serve: Place the hot kebabs onto warm paranthas, top with 1Β  onion salad to serve and a generous drizzle of 4 tablespoons chutney to serve. Roll up and serve immediately. πŸ’›πŸŒΏ
